AOP Languedoc Cabrières
Perfectly balanced, full-bodied, with great length and freshness.
Located in the heart of Languedoc in the South of France, Clos du Temple Temple was born on the historic terroir of Cabrières, the cradle of rosé wines.
The terroir owes its uniqueness to its geological genesis.
The contact between schist, limestone and hilly terrain is at the origin of a complex network of underground water circulation, favoring an exceptional natural water supply to the vineyard, and the emergence of a source of water of great purity.
Its altitude of 150 meters, combined with its south-southwest exposure, contribute to the production of a perfectly balanced wine with great aromatic freshness. At Clos du Temple Temple, we have decided to cultivate our vines using Biodynamic methods and to use horses and mules to promote the connection between mineral, vegetable, animal and human elements.
Clos du Temple has been voted best rosé wine in the world four times by Drinks Business.
Perfectly balanced, full-bodied, with great length and freshness. As the winery is located in the heart of the vineyard, transport time is kept to a minimum. The best juices are then selected. Cold pressing (5°C) preserves aromas and freshness, and avoids coloring the juice by blocking natural pigments (anthocyanins). Before low-temperature fermentation, the must is settled for 24 hours at a controlled temperature of 8-10°C, without the addition of sulfur. The wine is aged in new French oak barrels (oak from the Tronçais and Jupilles forests) for 6 to 8 months on fine lees, with stirring of the lees. The wines are blended on a fruit day, according to the biodynamic astral calendar, which is favorable to tasting.
