This vintage comes exclusively from the terroirs located on the oceanic climates of Limoux. Code Rouge is an ode to excellence and a tribute to the Premier Brut du Monde produced by the Monks of the Abbey of Saint Hilaire near Limoux. Blanc de blancs made from Chardonnay, Chenin and Mauzac, offers an exceptional expression of the high-altitude terroir that saw its birth, with finesse and elegance. This Crémant bears all the codes of Gérard Bertrand wines: the emblematic red color of its bottle and the Alpha and Omega symbols, evoking the constantly renewed cycle of nature that inspired its designation of Brut Eternel.

Vinification et élevage
The harvest is manual and the grapes are transported in baskets. Direct pressing is ensured with a pneumatic press which allows elimination of press juices by extractions of 30 to 40% of this one without re-dipping. A very careful settling of the juices is carried out, then an alcoholic fermentation is carried out at a controlled temperature 18°C. Malolactic fermentation can be carried out according to the vintage. A very precise blend of the various terroirs and grape varieties is carried out with bottling in January in order to promote a foaming. The aging is done on slats for at least 12 months.
Note de dégustation
The color is very pale, almost crystalline with bubbles. fine. The nose is floral and has notes of pears, citrus and fresh fruit. The palate is fresh and mineral. Code rouge is a fine, elegant and refined blanc de blancs.
