Vinification et élevage
The grapes are harvested at perfect ripeness at night to take advantage of the cool temperatures and express the optimal potential of the grape varieties. A sorting meticulous work of the harvest is carried out upon receipt of the grapes. The work grapes are dried under neutral gas to prevent oxidation risks musts. The grapes are destemmed, cooled to 8°C and sent to the press in order to extract the must. Particular attention is paid brought to the pressing so as to keep only the first juices more qualitative. The juices are then clarified more or less depending on the desired aromatic profile. Fermentations last between 15 and more 30 days depending on the degree of clarification and temperature applied. musts are vinified in thermoregulated stainless steel vats at low temperature, 16°C, in order to preserve the freshness and integrity of the aromas. After a light gluing, the assembly is carried out. The wines are then aged on fine lees in order to preserve their fresh and fruity character until the bottling.
Note de dégustation
The dress has a beautiful golden yellow color, sustained, lively and clear. The nose is complex and floral, revealing scents of flowers, complemented by buttery and fresh fruit notes. The palate, well balanced and quite powerful, remains smooth and creamy with flavors of yellow fruits and exotic, and honeyed and vanilla notes.
