Gérard Bertrand and his teams announce the opening of the brand new restaurant Chez Paule : traditional cuisine prepared over a wood fire, in a setting with old-world charm, accompanied by wines from the region's great terroirs.

Being born on January 1, 1900 probably predestined grandmother Paule Bertrand to an extraordinary life! She bravely lived through the 20th century, raising nine children. She acquired land and planted vines to produce wine. She cooked with love all her life for large family tables and left behind a precious notebook of stories and... recipes that today inspire the menu of the new restaurant that pays tribute to her.

Languedoc heritage dishes

Interpreted with a modern twist by Chef Laurent Chabert , Paule's recipes reflect the traditions of the entire region and are cooked in the restaurant's large fireplace, over a wood fire or in casseroles. The menu follows the seasons and the daily special is decided each morning according to the market. The wine list guides guests to discover the great terroirs and appellations of Languedoc Roussillon. The decor of wood, stone and second-hand objects invites you to savor our traditions as much as the benefits of the present time.

Open from Tuesday to Saturday, lunch and dinner and Sunday and Monday lunch, at Château l'Hospitalet, in Narbonne.
