Vinification et élevage
The harvest date is determined by means of maturity checks. regular, to the analysis of polyphenols contained in the films of grapes and thanks to the daily tasting of grapes as the season approaches harvest. Picking healthy, ripe grapes is a crucial step in achieve a high level of quality. The harvest is manual, the grapes are taken to the winery within the hour. The grapes are sorted then destemmed before being placed in a temperature-controlled vat. Each grape variety is vinified separately. The maceration time is around 20 to 25 days. At the end of winter, the wines are transferred to new barrels of 225 liters for a stay of between 12 and 16 months, in the magnificent Hospitalet cellar (2000 barrels). Stirring of the lees fines is carried out periodically. The best barrels from each of the grape varieties are selected and blended to produce this vintage.
Note de dégustation
The dress is bright ruby. The nose, intense, is dominated by aromas of spices and fruits red (strawberry). The mouth presents tannins silky and fine, highlighting the fruity freshness of this wine.
