Vinification and aging
The harvest is manual and the different grape varieties are harvested separately. The grapes are cooled to 8°C and immediately pressed delicately in order to extract the best juices. Fermentations are carried out at controlled temperatures and last around 2 weeks. Halfway through fermentation, part of the musts is transferred to new French oak barrels for 6 months. The wine is then aged on fine lees with regular stirring.
